Sugar, Desserts & Ayurveda

So, after the last couple of videos on sugar, many people messaged me saying, "Wait, so are deserts bad?" And the short answer is no. Deserts, per se, are not bad. Why? Because sweet is one of the fundamental six tastes that Ayurveda recognizes. It's called the "Shad Rasa." Sweet is one of those Shad Rasas. 

The issue is deserts need to be formulated, which means the recipe has to be made such that the metabolization of sugar is slowed down. This is the key thing in formulating deserts. And the way Indian deserts or Ayurvedic recipes do it is by presenting the sugar in the desert along with complex carbohydrates. Once you do that, the metabolization of sugar slows down, and the desert is not all that bad. Western deserts completely don't do this. 

So, how does the Indian deserts do this? By adding spices, by adding ghee—all of these, by adding fiber—all of these complex carbs are presented with the sugar, and then the body can easily assimilate at a slow pace the sugar.
