And add the peanuts. This will reduce the temperature of the oil so that the spices don't burn. Next, we add the curry leaves and the chilies, and stir it till the peanuts go slightly brown. Next, we add a pinch of asafoetida, or hing, and stir it. Next go the onions. And stir.

This step is optional. Some people add some turmeric, or some people choose to not add turmeric. This is an optional step. If you add the turmeric, stir it into the oil.

Next, we add some salt. A little bit of salt. And the reason for adding the salt here is that it cooks the onions faster, and the salt completely blends in with the onions. Next go in the carrots, and stir.
